Salad burnet


Salad burnet (Sanguisorba minor) is a pretty wildflower of chalk grassland. It has pale green flower heads which have a hint of red. The young leaves are edible and with a cool fresh cucumber flavour and fragrance. They are ideal to add to salads or salad dressings as the name suggests. In addition they are perfect to add to a cold drink on a Summer’s day. Salad burnet is easy to grow and perfect for any dry areas of the garden in sun or partial shade.

Other features:
Salad burnet has other medicinal properties, and can be used in herbal tea. The leaves freeze well for culinary use.
